Who doesn’t love banana bread and my mother’s is by far the best. So naturally, a cookie version seemed like a no brainer. Until I tried, and tried, and tried again. I found out so many ways how to not make a banana bread cookie until it finally turned out. It’s definitely one of the cookies I’m most proud of. Ever since seeing the Seinfeld episode about the Black and White cookie, I knew it was a cookie I needed to try. Not common in the west, we made a trip to NYC to sample as many as we could. And to be honest, they were underwhelming and it inspired Doc’s version with strong chocolate flavor and vanilla icing that tastes very strong but not too sweet. These frostings cover a very soft and pillowy buttermilk cookie.

The key ingredients to any turtle desert is chocolate, pecans and caramel. This version starts with a chocolate on chocolate dough with toasted pecans inside and out as well as caramel inside and out.

After a trip to Germany and visiting the famous Black Forest we tried some of the famous cake with the same name. The German version wasn’t great but you know what is - Doc’s version consisting of a chocolate cookie with white chocolate chips and cherries mixed into the dough adding even more moisture to the the cookie. On top is a cherry sauce that is baked on to it for more flavor. Even those that don’t like cherries are surprised at how much they like it.

The cookie has the same flavors of the classic dessert. The cookie has soft peach pieces inside with a peach sauce baked on top. On top of the peach is an oat sugar crisp (no nuts). Just add a scoop of vanilla ice cream and you’ll be one happy camper.

After spending 2 years in Mexico, Doc got a taste for Mexican sweets and this cookie is a nod to so many of those Mexican flavors which includes: dulce de leche mixed with shredded coconut and Mexican vanilla. The top is covered in toasted almonds and dark chocolate with a bit of heat. Sophisticated flavors but not so much, as even Doc’s kids love this cookie. And it just happens to be Gluten Free.

The reason we call it French is that it gets its name from the beurre noisette (brown butter sauce) added to it, but it doesn’t end there. This treat includes scraped vanilla bean mixed in with the ideal balance of marshmallow and cereal with sea salt flakes on top.

This has two lace cookies which consists of ground pecan caramalized to make a very thin crispy cookie. It then has a dark chocolate coating on the bottom of each cookie to make a sandwich of delicious pistachio cream. It’s light and delicate and the ideal Dubai dessert.
